I regret to report that I was unable to extract from my recalcitrant informants the recipe for the cheese grits I waxed poetic about on Friday night. They were excellent but alas! just exactly how excellent they were shall remain a state-guarded secret.
Cheese grits the way I learned to make them --
1 cup grits
1 tsp salt
4 cups boiling water
1-1/2 cups shredded sharp cheddar cheese
1/2 cup butter
1/2 cup milk
2 eggs [well-beaten]
1 garlic clove [minced]
- Stir grits into boiling water.
- Reduce heat and simmer 2-5 minutes.
- Add cheese and butter and milk.
- Add a small amount of this mixture to the eggs [to warm them gently] and then add eggs to grits.
- Add garlic.
- Stir until cheese is melted.
- Pour into greased 2-quart casserole dish.
- Bake at 350 for 1 hour.
NB. Hominy grits is the only kind of grits there is. If you absolutely have to cook with corn meal there's always --

1 box Jiffy corn muffin mix
1 egg
1 onion [chopped fine]
1 bell pepper [chopped fine]
1 beer [divided]
- Mix the first 4 ingredients.
- Add just enough beer to make a stiff batter.
- Drop batter by spoonfuls into deep fryer [use peanut oil]
- Drink the rest of the beer while hush puppies are cooking.
Hush puppies are what you cook along with the fish at a fish fry. If you're a good fisherwo/man [or just a lucky one] you'll need the industrial strength version --
12 boxes Jiffy corn muffin mix
1 dozen eggs
12 onions [chopped fine]
12 bell peppers [chopped fine]
1 six pack beer [divided]
- Mix the first 4 ingredients.
- Add just enough beer to make a stiff batter [usually one can/bottle].
- Drop batter by spoonfuls into deep fryer [use peanut oil]
- Drink the rest of the beer while hush puppies are cooking.

not that i'm complaining in the least. i'm firmly of the opinion that an interjection of victor borge into any realm can only improve it. my dad's a huge fan, especially of the punctuation, and we kids grew up using it liberally. not all of our teachers approved.

I took my kids to
what must've been Borge's last show in Boston.
It blew me away that they were hearing music and comedy that was originally sold on 78s.
I've also taken them to see Les Paul, who must have done some 78s. And he did a song called "Ham 'N Grits."
Cauliflower recipe
....and for those recovering alcoholics in our midst.
Hannah's famous cauliflower burgers that can be made vegetarian easily.
Ingredients:
* kitchen spices (like pepper, salt, merquén, crushed red pepper, dried garlic, etc.)
* a medium bottle of sunflower or other cooking oil
* favorite white cheese, chopped fine or grated
* approx. 4 eggs
* medium head of cauliflower
* bouillon (veg. or chicken is fine)
* a bowl of regular flower mixed with kitchen spices
1. Boil one medium head of cauliflower with bouillon and whatever spices you have in the kitchen until easily pokable by a fork.
2. Rinse with cool water and strain as well as possible.
3. Mush with potato masher and add more bouillon to taste.
4. Beat eggs in a separate bowl with salt, pepper, and kitchen spices until the white/yolk are indistinguishable from one another.
5. Mix eggs and cheese into cooled mushed cauliflower, it should have a moldable consistency.
6. Make a hamburger sized patty in your hand and transfer to flour mixture, you will find your own best method.
7. Use a spatula to place molded, floured burger into a pan of sizzling oil. The oil should cover or at least almost cover the patty.
8. Cook until brown on both sides
8.5. I suggest placing them in the oven while the rest are cooking to keep them from getting cold.
Voila!
Variations: with a different color cheese, with different and/or more vegetables, with bread crumbs...etc.
Open up a bottle of jack and enjoy.
