Frozen Bell Peppers

Not everyone has a good freezer available. I used to dream of the day I could keep ice cream at home! If your freezer isn't quite as "freezing" as it should be, you can still use it to take advantage of sales but don't keep things quite as long.

This week my local store had red, yellow and orange peppers on sale for $1 each. I know, that isn't REALLY cheap! However, red bell peppers have more vitamin C than oranges and they work well in many different types of recipes.

From a combination of red, yellow and orange peppers:

Clean and slice the peppers into thin strips.
Put the strips in a single layer on a baking sheet covered with waxed paper
Place them in a freezer for about 30 minutes

When they are partially frozen take a handful of each color and fill quart size freezer bags. Freezing them first will keep the peppers from sticking together so that any amount you need can be pulled out of the bag later. Two large peppers will fill a quart size freezer bag.

These peppers will be perfect for Asian style stir-fry dishes, fajitas or Italian dishes.

I assume a reason for the high cost of peppers is that shipping them requires so much space. Frozen vegetables are usually cleaned and frozen on site. That makes them fresher than what you can buy at the grocery store and freeze yourself. I eat a lot of peppers in season, but buy frozen pepper strips (not pepper stir-fry, which is largely onions) when the price of peppers goes up.
