This is recipe originally came from the side of a box of CousCous. I've changed it through trial and error.
Many of the ingredients are common for gardeners to grow, so maybe that will help with making it cheap. My garden is getting off to a late start but I've had good luck getting good prices on fruits and vegetables lately at the local produce store. The couscous is probably the most expensive ingredient.
CousCous Salad
Prepare couscous using 2/3 cup dry couscous prepared with 1 cup liquid
combine:
couscous
1 cup tomatoes, diced
1 cup cucumber, diced and seeded roughly - some seeds are fine
1 cup green onions, chopped
1 cup parsley chopped
1 cup garbanzo beans, cooked (even if they are canned heat them up)
1/4 tsp black pepper
juice of 2 lemons
1/4 cup olive oil
3-4 cloves garlic, pressed
2 tbsp fresh mint, chopped
1 tsp salt
Combine all the ingredients and refrigerate for at least 1 hour before serving. Serve cold.
